Yllera Verdejo Ecológico Vendimia Nocturna

We have been applying sustainable vineyard management for years, and now we are taking another step forward with this certified organic wine with which we are committed to a cultivation that is more respectful of the soil and the biodiversity of the environment.

Vineyards

Organically grown Verdejo. Vineyards located in Villaverde de Medina on a sandy loam soil, poor in organic matter, with calcareous clays that provide freshness and a certain mineral character, together with magnificent acidity and structure in the mouth. 

Wine Making

Mechanical harvesting at night, taking advantage of the cold hours and the absence of light to preserve the grapes.  Direct pressing, combining free-run juice, which gives us freshness and aromatic intensity, with a percentage of press must, which gives us power and volume in the mouth.

Flotation to clean the must. Fermentation at 18 degrees, with neutral yeasts, seeking the maximum purity and expression of the Verdejo variety. Ageing on lees for three months. Clarification and cold stabilisation. Final filtration by 0.65 micron membrane.

Tasting notes

Pale yellow colour with some greenish tinges. Fragrant, powerful nose, with aromas of classic Verdejo, elegant aromas of white fruits (apple) and stone fruits (apricot), hints of hay, fennel, aniseed and citrus tones, together with certain mineral notes. Full and long on the palate, with a fresh acidity and great persistence. 

FOOD PAIRING

Ideal as an aperitif and to accompany all types of fish, seafood, rice dishes, fried foods and Japanese food.
